saying 指的是「一種固定的說法」；

可能是古代流傳下來的俗語，通常具有某種教育意義或趣味性，我們又稱之為「諺語」(proverb)。

或是歷史偉人曾說過的名言，集結智慧與經驗於精鍊的短語，我們又稱之為「格言」(maxim)。

The saying "out of sight, out of mind" means that you don't think about things that are not to close to you - that you cannot see. "Sight" means the same here as to be able to see, or something that you see. So, if you can't see it, you don't think about it - you forget about it.
